Happy Tuesday Lamppost Coffee Roasters followers, coffee enthusiasts and aficionados everywhere. I am Valorie King, owner of Lamppost Coffee Roasters in Bonney Lake, Washington. We are live during open hours here in the cafe. Today I will be introducing our two newest team members and giving you a few updates along with my top tips for brewing coffee at home. I'll also be doing a live demonstration of the Clever Coffee Dripper pourover style. Again, I am Valorie King, owner of Lamppost Coffee Roasters in Bonney Lake.

COVID Update Besides our hours
We are still in phase 2 of the safe start safe opening plan for Washington state.
That means 25% customer/guest seating. For us, that means a total of 6 people. We have not opened up our back area for meetings yet.
We continue to believe the best in our amazing customers & guest. We believe and trust that if you are wearing a mask, you are able to do so. If you are not wearing a mask, we will not ask any questions and trust you are not able to wear one.
We continue to ask people to be mindful of social distancing as much as possible in our tiny space.
If you want to order ahead, your welcome and encouraged to download the Joe Coffee App on to your smart phone. We'll go over that app again in an upcoming FB Live.

7:30 My Top Tips for brewing a delightful cup of coffee at home:
Fresh roasted coffee - roast date
Ratio coffee to water matters Drip & Pour overs 1:16
Grind right before you brew
Grind size matters - grind for your brewing method
Time - each brewing method has an optimal amount of time for coffee to be in contact with the water
At home I have a coffee brewing corner. Everything I need is there. Top recommendations of tools & equipment:
scale that weighs in grams
Timer or time tracker
brewer with all of it's accessories
a burr grinder, if at all possible
carafe to decant if you don't drink it all in the same cup!
of course, your favorite mug

11:10 Clever Coffee Dripper Demonstration:

Today, let's brew coffee in the Clever Coffee Dripper - Pourover style
Fresh roasted coffee - Colombia Antioquia roasted on 2/27.
Ratio coffee to water 1:16 ratio 24 gm coffee to 360 ml water
Grind size matters - for a pourover I'll be grinding slightly finer than I would for a drip coffee
Grind right before you brew
Time - Everyone has an opinion and that's ok! Here we keep our pourovers to 3 1/2-4 minutes. Roastmaster 3 minute, I like 4 minute. Using the CCD as a pourover, you are controlling the time by grind.
My scale has a timer however, I can use a separate time or the timer on my phone.
I have a variable temperature hot water heater, but that isn't so important. You can simply boil your water on the stove top. Some pour right away and some wait for about 30 seconds off boil. Part of this will be your preference in how the final product tastes.
Heat my water to 202 degrees. While it's heating, I weigh out and prep my coffee for grinding.
Pre heat my Clever, mug and both kalita carafes. Rinse & dump
Grind right into the filter
60 ml first pour -
30-45 second bloom & stir down.
Divide the remaining water into 3-4 pours. Easy math: 3 x 100 ml pours.

Want to Brew a Better Cup of Coffee at Home?

I made this video during the COVID 19 pandemic. During this pandemic, Lamppost Coffee Roasters is open for take out/carry out beverage orders. We also are using the Joe Coffee app (download this through your app store) for mobile beverage ordering.

You can also order roasted coffee here through our 
webstore. We can ship to you or, if you are local to the Puget Sound region, you can choose free in-store pick up. We do rotate through some coffees. Don't be surprised if a single origin changes or is not available since the last time you ordered. :) Coffee is also an agricultural product. Flavor profiles for each coffee can change from harvest to harvest along with aging in the current crop/harvest.

​More people are brewing coffee at home. Brewing coffee is all about coffee to water ratios, grind sized and time. A few basic assumptions I will make is that you are willing to:
  1. Experiment to find the coffee to water ratio you like as well as the grind size. When using a drip coffee maker, the manufacturer chooses the time and the cup size. Be sure you know the cup size so you can figure out the ratio!
  2. Purchase fresh roasted coffee.
  3. Invest in some reasonably priced home equipment.

Drip coffee made easy! In order to do so, you need a few things:
  • a drip coffee maker
  • a grinder
  • filter
  • fresh roasted coffee
  • a kitchen scale
  • filtered water
  • cup to drink from

The first two pieces of equipment that I strongly recommend purchasing are a burr grinder and a simple kitchen scale that weighs in grams.

​Corrections & Edits:
  • You'll see about four minutes into the video that I had not cleaned out the home grinder. #embarrasing I clean it out every few weeks.
  • We like a 1:16 ratio of coffee to water. The Bonavita we use at home brews best at 1000 ml level. So we use 63-64 gm of coffee to 1000 ml of water.
  • About nine minutes into the video I talk about grinding coffee and pre-ground coffee. I said you have about 10 minutes from the time you "brew" coffee before staling really sets in. I meant, you have about 10 minutes from the time you GRIND coffee to brew with it before the flavors and freshness begins degrading noticeably.

Rwanda Hingakawa - More of Their Story

This amazing 20 minute video was made by Starbucks and highlights the amazing women of the Rwanda Hingakawa Co-op. We are so grateful for Starbucks assistance in helping to get their story told. It's about so much more than coffee. This women (and men) are creating a new culture and weaving a beautiful story as they overcome fear and prejudice to make poverty their common enemy. It's worth the 20 minutes!
